About the role

The Food Service Supervisor II (S) position at Longleaf Neuro-Medical Treatment Center (LNMTC) is responsible for reviewing menus and recipes for daily production, directing food preparation, cooking, and serving of meals, and managing kitchen operations. This position also oversees the scheduling of staff, supervises the Ingredient Control position, and manages the diet card functions.

Responsibilities

  • Reviews menus and recipes for daily production to ensure requirements are met.
  • Relieves the Supervisor position in directing food preparation, cooking, and serving of meals for residents and the employee cafeteria as needed.
  • Fulfills safety and sanitation procedures to ensure a safe and clean department environment.
  • Schedules staff for the department to cover Cafeteria and kitchen responsibilities.
  • Supervises the Cafeteria functions of the kitchen and the Ingredient Control position to ensure sufficient food quantities.
  • Monitors ingredient costs and prepares necessary data for Budget reports.
  • Supervises the Diet Clerk in the diet card functions.

Requirements

  • Considerable knowledge of methods, materials, and equipment used in large-scale cooking and food service activities.
  • Knowledge of management principles related to supervision of employees.
  • General knowledge of dietary requirements for various special diets and allowable substitutions.
  • Ability to estimate raw food quantities needed to supply the number of persons to be served.
  • Ability to evaluate levels of sanitation and food safety and implement corrections when warranted.

Qualifications

  • Bachelor's degree in dietetics, food management, culinary arts, or hospitality management from an appropriately accredited institution.
  • Four years of supervisory experience in the preparation and serving of food in quantity lots.
  • An equivalent combination of education and experience.

Skills and Abilities

  • Knowledge of preparation, cooking, and baking procedures.
  • Knowledge of appropriate methods of cleaning and sanitizing equipment and small wares.
  • Ability to perform moderately heavy physical labor for extended periods of time.
  • Ability to maintain professional, cooperative working relationships with employees and/or patients.
  • Ability to maintain high sanitation standards as outlined in the NC Food Code.
  • Ability to follow oral and written instructions.
  • Ability to complete department records as required.

This position is designated mandatory and must report or stay over during adverse weather events or other emergencies. The North Carolina Department of Health and Human Services (DHHS) offers competitive salaries ranging from $39,244 to $68,679 based on relevant qualifications, internal equity, and budgetary considerations. The hiring process may take several weeks.

The starting salary range for this position is $39,244 to $68,679, depending on qualifications and experience.
