Food Service Manager in Training
About the role
The Assistant Food Service Director works with the Food Service Director to plan, direct, and coordinate activities associated with running a large food service operation with one or more production kitchens. The Assistant Food Service Director is also responsible for supervising a group of food service workers that are involved with the preparation and distribution of food in the kitchen.
Essential Functions/Core Responsibilities
- Supervises, trains, and manages the facility food service operation.
- Hires, orients, trains, and issues corrective action (when applicable) to team members.
- Reviews and approves payroll on a weekly basis.
- Buys, orders, and receives food supplies.
- Ensures team is adequately trained and capable to perform job responsibilities in a safe and compliant manner.
- Maintains accuracy of inventory in advance preparation of planned menu schedule.
- Oversees the appropriate quantities of food are prepared and served according to facility or site plan.
- Manages food service operation in compliance with internal policies and procedures as well as required local, state and federal laws and regulations.
- Maintains a sanitary environment following food service and Health Department codes and regulations.
- Maintains accurate on-site reports of daily and monthly financial, production, and activity.
- Plans for special events and functions through participation in meetings with assigned customer facility operations staff.
- Maintains all serving schedules to ensure all food items are served per menu specifications in a safe and appropriate manner according to departmental guidelines.
- May participate in the contract negotiation and renewal process.
What You'll Need
- A High School Diploma or Equivalent, and you must be at least 18 years of age.
- Two years of management or supervisory experience in a food service position.
- Three years of experience working in food service.
- ServSafe Certification.
- A valid driver’s license is required.
- Experience with purchasing, inventory, ordering and receiving.
- Knowledge and experience managing and applying kitchen sanitation and safety standards and methods.
- Knowledge of basic accounting and mathematical abilities to complete necessary reports.
- Proficiency in all Microsoft Office applications and with food service management systems.
- Prior institutional food service or restaurant experience is preferred.
