About the role
The purpose of this position is to ensure that meals are prepared in a regular and consistent manner so that food quality standards are met.

Duties
Lead Cook Duties
- Meet or exceed industry standards for the preparation, storage and serving of food
- Prepare meals according to the recipe in a regular and consistent manner
- Assign cleaning duties as needed
- Ensure that all food preparation is completed for next shift
- Accurately complete the daily, weekly & monthly cleaning lists
- Assist with the training of kitchen personnel
- Record production and waste on a regular and consistent basis
- Adhere to USSRC policies and procedures
- Assist with the accurate counting of inventory each week
Inventory Control Duties
- Assist Inventory Manager in inventory and purchasing of food products, organization of all coolers and unloading trucks
- Check off all products on purchase orders as well as on production sheets in kitchens
- Place items in the proper buildings depending on party location
- Responsible for creation of production sheets from catering contracts and making sure all production sheets are placed in the proper locations (production folder & kitchen wall)
- Responsible for special diets mail box and ensuring all items are purchased for each request as well as placing special diet menu on menu board
- Assist Executive Chef, Kitchen Manager, RMS Inventory Manager in duties as assigned
- Complete purchase orders for items in the Kitchen as needed or directed

Qualifications
Education
- Completion of High school or G.E.D. required plus two years of college
- Additional certifications are proven assets
Experience
- Two years’ experience managing a full service or institutional kitchen
- Must possess excellent verbal communication skills to interact effectively with guests and employees
- Must have knowledge of food preparation, sanitation standards, and inventory control systems
- Must be able to lead, direct, budget and schedule staff and resources
Other Requirements
- Must be authorized to work in the United States
Physical Requirements
- Walking, climbing (stairs) to access other departments
- Standing for long periods of time (6-7 hours) instructing, training & supervising employees
- Sitting for short periods of time (1-2 hours) at a desk operating a computer terminal
- Lifting, carrying, pushing supplies & boxes up to 40 lbs. waist high
- Bending, kneeling, reaching to store/retrieve supplies
- Sight, reading, wrist movements, feeling to operate food service equipment, computer terminal, develop schedules, review reports
- Talking, hearing to instruct employees and assist guests and trainees in person and over the telephone
