About the role
The Culinary Services Manager is responsible for the overall daily management of the Culinary Services Department, ensuring nutritional meals are prepared according to residents' care plans and BSG Policy and Procedures. You will provide leadership to ensure compliance with local, state, and federal regulatory requirements, including the latest edition of the Federal Food Code.
Responsibilities
- Supervisory: Recruit, interview, hire, train, coach, and discipline employees. Conduct monthly in-service training with staff. Manage labor and control costs. Adhere to the dress code policy and ensure staff compliance.
- Meal Prep: Process diets and update the tray card program. Print menus for residents weekly and meal tickets daily. Review and approve menus. Post mealtimes visibly and monitor compliance. Ensure menus, diet plans, and portions are followed.
- Food Storage: Ensure proper receiving, FIFO (First In, First Out) stocking, storing, and preparing of all ingredients for safety and accessibility, with proper dating at each step.
- Reporting: Understand nutritional requirements for residents. Attend Care Plan meetings per policy. Complete the MDS (Minimum Data Set) according to the required timeline. Monitor weight gain and loss and report to the dietician for residents at risk. Audit all logs. Update the Dietary SDS (Safety Data Sheet) book regularly.
- Resident Interaction: Visit residents within 48 hours of admission to interview and record allergies. Be polite and helpful, responding to residents' requests and inquiries promptly and professionally.
- Compliance: Adhere to all safety and sanitation policies and procedures. Comply with Residents' Rights and Community Policies and Procedures. Follow the Federal Food Code, local regulator laws, and CMS (Centers for Medicare & Medicaid Services) guidelines. Maintain confidentiality, protect HIPAA, and uphold Resident Rights. Document and resolve resident complaints. Follow the HACCP (Hazard Analysis Critical Control Point) plan. Ensure all temperature logs are current and accurate daily. Maintain cleaning logs and ensure the kitchen is cleaned regularly. Report equipment malfunctions and ensure regular cleaning of equipment.
Requirements
- High School Diploma or GED.
- Current CDM (Certified Dietary Manager), CFPP (Certified Food Protection Professional), and/or CFM (Certified Food Manager) Certification.
- 5+ years of experience in a CDM/CFPP or Culinary Supervisor role.
- ServSafe Manager Certified.
- High-volume cooking experience.
- Experience using a combi-oven, standard oven, flat top grill, convection oven, stovetop, gas grill, steamer, and dishwasher.
- Ability to pass a TB test and healthcare background check.
- Above-average computer skills.
- Detail-oriented, well-groomed, friendly, professional, and a team player with a pleasant demeanor. Adheres to company policy and procedures.
- Strong attention to detail and commitment to maintaining high cleanliness standards.
- Ability to work independently and efficiently manage time.
- Physical stamina and the ability to lift, bend, and stand for extended periods.
