About the Role
The Food and Beverage Manager at The Lobby Market, located within Hotel Kansas City, will lead a dynamic coffee and hospitality experience that evolves throughout the day—from expertly prepared coffee and in-house made delights to approachable daytime service and rooms hospitality. This hands-on, hospitality-driven role is ideal for someone who combines strong restaurant leadership with genuine knowledge of coffee, barista, and/or bartending techniques, as well as minibar service. The role requires active participation in daily operations, coaching team members, and ensuring a seamless guest experience.
Responsibilities
- Oversee daily Lobby Market and Minibar operations, ensuring consistent service, product quality, cleanliness, organization, and guest experience.
- Maintain a highly visible, hands-on presence during service, actively supporting barista, minibar, and guest service functions as needed.
- Coach colleagues on coffee preparation, espresso technique, cocktail execution, beverage knowledge, responsible alcohol service, and hospitality standards.
- Ensure opening and closing procedures, cash handling, POS processes, stocking, side work, and shift communication are completed consistently.
- Create memorable guest experiences by recognizing repeat guests, anticipating needs, engaging with hotel guests, and resolving concerns with urgency and care.
- Hire, train, coach, develop, and evaluate colleagues while building a culture of teamwork, accountability, recognition, and continuous improvement.
- Develop schedules based on business volume, hotel occupancy, and established labor goals.
- Maintain appropriate inventory and operating levels for coffee, beverage, alcohol, supplies, service equipment, and other products.
- Identify opportunities to increase revenue through beverage recommendations, upselling, seasonal offerings, and thoughtful guest engagement.
- Partner with Culinary, Beverage, Front Office, Events, Sales, and other hotel teams to create a seamless experience for guests and local patrons.
- Ensure compliance with food safety, sanitation, responsible alcohol service, cash handling, workplace safety, and Hotel Kansas City and Hyatt standards.
Beverage Leadership
- Maintain strong working knowledge of espresso beverages, coffee preparation, and barista techniques.
- Reinforce consistency in drink preparation, presentation, recipes, portioning, and quality.
- Lead ongoing beverage education and tastings to build colleague knowledge and confidence.
- Coach baristas on espresso preparation, milk steaming and texturing, drink construction, equipment care, and efficient workflow.
- Partner with Beverage and Culinary leadership on new offerings, seasonal changes, product rollouts, and colleague education.
- Ensure beverage equipment and service areas are properly maintained, organized, stocked, and ready for service.
- Ensure minibar operations are consistent, organized, and accurately captured.
Qualifications
- At least one year of restaurant, bar, café, or food and beverage management experience.
- Previous experience managing and developing front-of-house colleagues, including scheduling, training, coaching, and performance feedback.
- Hands-on barista or bartending experience and knowledge of espresso preparation, coffee beverages, milk steaming, and coffee equipment.
- Strong understanding of guest service, service recovery, restaurant or café operations, and hospitality standards.
- Experience with POS systems, scheduling, inventory, cash handling, and basic restaurant financial controls.
- Hotel, specialty coffee, or other high-touch hospitality experience preferred.
- Required food handler or other certifications must be obtained and maintained in accordance with company policy and applicable law.
