About the Role
This position involves food production, sanitation, and customer service in a commercial kitchen and cafeteria setting. The role requires adherence to food sanitation standards, operation of kitchen equipment, and support of therapeutic and institutional food production.
Responsibilities
- Setup and breakdown of dish room; ensure dishes are clean, sanitized, air-dried, and put away before each meal service.
- Maintain cleanliness: sweep, mop, take out trash, and manage grease traps as needed.
- Setup and breakdown of cafeteria; prepare and serve all menu items while maintaining professional customer service.
- Keep the cafeteria and dining room clean and stocked at all times; sweep, mop, and take out trash as needed.
- Prepare for future recipes by following instructions and producing quality, nutritious food, including therapeutic diets, under the supervision of the Chef.
- Understand therapeutic diets and assist patients with meal selections within dietary orders.
- Prepare nourishments and patient trays; deliver patient trays while following hospital sanitation protocols.
- Support kitchen and café staff by assisting with other tasks as needed.
- Follow health and safety standards at all times to prevent cross-contamination.
- Perform other duties as assigned.
Requirements
- General understanding of food sanitation standards and techniques.
- Knowledge in the use and maintenance of commercial kitchen equipment.
- Ability to follow detailed written and verbal instructions.
- Ability to organize and prioritize work, adapt to changes in pace, and focus on all areas of each task.
- Ability to work independently with minimal supervision while maintaining sanitation and productivity guidelines.
Qualifications
- Preferred: Knowledge of therapeutic food production and institutional food production utilizing recipes.
Physical and Mental Demands
- Medium physical demand level; must be able to lift up to 50 lbs. and push/maneuver carts weighing up to 350 lbs.
- Ability to stand for up to 3 hours continuously and perform repetitive tasks for up to 3 hours continuously.
- Ability to ambulate safely with hot items.
- Must tolerate extremes of noise, temperature, and humidity.
- Must work collaboratively in congested areas.
- Requires reaching, handling food, touching food, talking, hearing, and seeing.
- Must meet set timelines and work under pressure.
- Must operate equipment such as commercial dishwashers, meat slicers, commercial mixers, and other appliances.
