About the Role
Under the direction of the Head Cook, the Prep Cook performs a variety of tasks and duties which include preparing, seasoning, and cooking, while conforming to food safety standards.
Responsibilities
- Ensure compliance with applicable Tribal, Federal, and other laws and gaming regulations, as well as Kickapoo Lucky Eagle policies and procedures.
- Provide high-quality guest service by properly listening and responding to guest and team member concerns.
- Prepare high-quality, fresh hot and cold food items in a timely manner using standardized recipes and methods under the direction of the Head Cook.
- Replenish prep line food items to ensure proper presentation and availability for guests.
- Adapt to changes in menu preparation and production methods.
- Respond to guest preferences and concerns.
- Prepare food items consistently with little to no variation in appearance and taste.
- Ensure uniformity and consistency in each order, practice portion control, and minimize waste.
- Maintain proper food storage and adhere to food handling procedures according to sanitary regulations.
- Properly label and date all food items in refrigeration coolers and rotate items appropriately.
- Organize, maintain, and clean refrigerated and dry storage areas.
- Maintain a sanitized and organized workstation free of debris during shifts.
- Maintain proper care of all kitchen equipment and utensils.
- Clean workstations immediately following food preparation.
- Prepare fruits and vegetables for serving by washing, peeling, chopping, dicing, cutting, slicing, dressing, and storing.
- Prepare a variety of cold meats, including cracking or removing shells from seafood, slicing cold menu items, pastries, sandwiches, and garnishes.
- Operate kitchen equipment such as stoves, cooktops, broilers, deep fryers, hand tools, microwaves, blenders, cutters, processors, and knives.
- Report injuries immediately and follow proper handwashing and sanitation guidelines.
- Prepare food for special events and catering for meetings when assigned.
- Taste and sample prepared food items to ensure quality.
- Demonstrate and promote KLECH core values and MAD skills.
- Manage and maintain the security of confidential information.
- Attend and complete all required training as assigned.
- Monitor compliance with Federal currency transaction reporting requirements, Title 31, IRS Currency Transaction Reports, and Anti-Money Laundering policies.
- Perform other duties as assigned.
Requirements
- Minimum six (6) months of experience as a cook or prep cook.
- Ability and willingness to follow established recipes.
- Communication skills in English (written and oral preferred). Spanish or other language skills are a plus.
- Qualified Kickapoo Traditional Tribe of Texas Members and qualified Native American preference is observed.

Physical Demands
- Regularly required to stand, sit, walk, push, pull, climb, and bend for extended periods.
- Must be able to reach with hands and arms, talk, and listen regularly.
- Must concentrate for prolonged periods.
- Requires close vision, distance vision, peripheral vision, and depth perception.
- Must communicate effectively in person or using telecommunications equipment.
- Must have hand-eye coordination and manual dexterity to operate equipment like keyboards, touch-screen displays, telephones, and calculators.
- Frequently lift and/or move up to 50 lbs.
Work Environment
- Back of the house, casino floor, and normal office setting.
- Frequent walking and standing in a smoke-filled environment with regular contact with the general public.
- Temperature-controlled environment with varying noise levels; may be exposed to high noise levels throughout the day.
- Extended hours and irregular shifts, including nights, weekends, and holidays.
- Must perform under pressure and work long hours under stressful conditions.
- May be exposed to risks when resolving issues with difficult guests or irate staff.
- May be exposed to various types of lighting, including artificial fluorescent lights, flashing lights, strobe lights, and colored lights.
- Travel may be required to perform essential functions.
Conditions of Employment
- Must obtain and retain a KTTT Gaming Commission License, including successful completion of a background check.
- Must provide authorization to work in the United States.
- Must be at least 18 years of age.
- Must have access to reliable transportation to commute to and from work.
- Must comply with KLEC handbook, internal policies and procedures, and gaming regulations.
