Key Responsibilities
- Prepare, cook, and present menu items according to recipes, production standards, plating guides, and quality expectations.
- Set up assigned station with required mise en place, tools, equipment, and supplies before service.
- Monitor food production, quality, consistency, and presentation throughout the shift.
- Work across multiple kitchen stations as business needs require.
- Review prep lists, production schedules, pars, and anticipated business levels with culinary leadership.
- Maintain complete knowledge of menu items, ingredients, preparation methods, portion sizes, presentation standards, and timing.
- Follow proper food handling, storage, labeling, rotation, and sanitation procedures.
- Maintain cleanliness, organization, and sanitation of work areas, equipment, reach-ins, walk-ins, shelves, cutting boards, and prep tables.
- Communicate shortages, 86’d items, special needs, or service concerns to culinary leadership and appropriate F&B colleagues.
- Minimize waste and support food cost controls through proper production, storage, and portioning.
- Assist with inventories, banquet plating, special functions, and other kitchen duties as assigned.
- Support training and development of culinary colleagues when needed.
- Provide direction to other colleagues in the absence of a supervisor or hourly Sous Chef, as appropriate.
Qualifications
- Good communication skills required.
- At least 4 years of previous line cooking and/or fine dining experience preferred.
- Culinary degree, culinary training, apprenticeship, or related hotel experience preferred.
- Ability to work most kitchen stations.
- Strong knowledge of basic and intermediate cooking techniques.
- Ability to read, understand, and follow recipes and production standards.
- Ability to expand or reduce recipes as needed.
- Strong attention to detail, speed, accuracy, organization, and prioritization.
- Ability to work cohesively with culinary, stewarding, F&B, and hotel colleagues as part of a team.
- Ability to remain calm, professional, and solution-oriented during busy service periods.
- Food handler certification or ability to obtain required certification.
- Must be able to work a flexible schedule, including AM/PM shifts, weekends, and holidays.
- Ability to stand and walk for extended periods throughout the shift.
- Ability to lift, carry, push, and pull items consistent with kitchen operations.
