About the role
The Executive Director of Banquets will oversee the Banquets operations at Hard Rock Las Vegas, a luxury resort on the Las Vegas Strip. This role involves supervising the Banquet Office, managing OS&E, collaborating with sales and catering teams, and leading the team through training and standard operating procedures.
Responsibilities
- Supervise the Banquet Office to ensure timely completion of payroll, schedules, and reports.
- Manage OS&E, including planning, sourcing, purchasing, transporting, storing, and installing non-consumable items.
- Ensure brand standards are met, costs are controlled, and inventory is available for smooth operations.
- Review Banquet Event Orders (BEOs) for accuracy, optimize room setups, manage staff to meet budget and service standards, and ensure compliance with the Collective Bargaining Agreement (CBA).
- Align culinary execution with event service, ensuring high-quality food, proper timing, cost-effective menu planning, and upholding safety/hygiene standards.
- Operate at a high level to ensure best-in-class service levels for all events, leading by example.
- Hire and discharge employees according to established policies, ensuring appropriate staffing levels.
- Oversight of continued development of training and standards for the team through education, training, coaching, corrective counseling, etc.
- Attend and conduct staff meetings, Banquet Event Order Meetings, Forecast Meetings, F&B Meetings, and Pre-Convention Meetings.
- Design, plan, and price all menus, keep departmental labor costs on an acceptable level, and monitor scheduling to ensure maximum coverage.
- Prepare and adhere to monthly budgets and payroll forecasts, and monitor P&L statements to ensure objectives are met.
- Drive P&L strength by implementing appropriate programs and systems, providing oversight to ensure adherence, and conducting detailed management and operational analyses.
- Ensure adherence to property policies, food and beverage policies, labor regulations, and liquor laws, and promote positive public/employee relations.
- Represent the organization at industry events and trade associations, actively participate in philanthropic initiatives, and uphold the Hard Rock brand's reputation through ethical practices.
- Perform other job-related duties as requested.
Qualifications
- Requires a BS/BA degree in Hospitality Management or another related field. Master’s degree preferred.
- Minimum of ten (10) years food & beverage experience, including five (5) years in Banquet department head level.
- Hands-on experience in the successful pre-opening and launch of large-scale banquet hotel and casino properties.
- Critical path management strongly preferred.
- Minimum ten (10) years Food & Beverage experience, with minimum five (5) years in management capacity.
- Commitment to delivering a service level that creates a memorable entertainment experience for guests.
- Strong communication and interpersonal skills to effectively communicate with guests, team members, all levels of management, and other departments.
- Proven ability to direct, motivate, and develop staff.
- Adaptable to departmental strategic plans to achieve organizational goals.
- Flexible to work all shifts, including holidays, nights, weekends, and overtime as business needs dictate.
- Ability to add, subtract, multiply, and divide in all units of measure, use whole numbers, common fractions, and decimals, compute rates, ratios, and percents, and draw and interpret bar graphs.
