About the Role
Ridgewells, the exclusive caterer for the US Open (golf), is seeking an Executive Chef to manage, direct, and oversee all culinary aspects within the Major Events Division, including the US Open catering operation.
Responsibilities
- Maintains recipe standards to ensure food is produced to specifications.
- Schedules regular and temporary kitchen employees based on business forecasts and budget.
- Oversees employee productivity to maximize efficiency and meet labor budgets.
- Reviews, approves, and maintains payroll records for submission to the payroll department.
- Maintains food costs as predetermined by management and budget.
- Assists with or personally prepares and executes client menu tastings.
- Leads menu development, recipe development, sourcing of products, purchasing, food production, and on-site food finishing.
- Ensures food is prepared in an organized, efficient, and timely manner with high sanitation standards.
- Manages employees to meet established food preparation deadlines.
- Functions as a hands-on chef and participates in training on-site culinary employees.
- Ensures all on-site systems and HAACP plans are properly followed and maintained.
- Oversees menu planning, budget preparation, payroll management, food cost control, and record-keeping.
- Implements company policies within food production departments.
- Assists the Ridgewells Main Kitchen Executive Chef as needed.
- Manages inventory control, conducts monthly inventories, and ensures daily production needs are met.
- Ensures the entire staff practices safe and sanitary food handling procedures.
- Handles hiring, discipline, performance appraisals, and termination of employees for local contract accounts.
- Performs other duties as reasonably assigned to support business needs.
Requirements
- Degree from a post-secondary culinary arts training institute.
- At least five (5) years of proven management experience.
- Results-oriented with the ability to rely on experience and judgment to plan and accomplish goals.
- Strong verbal and written communication and employee relation skills.
- Ability to organize, prioritize work, and meet deadlines.
- Strong culinary background and knowledge.
- Proficiency in computer applications.
- Travel is required, including several trips per year (3–4 days each) and extended travel from late May to late June for the US Open. Additional travel may be required for other events.
