About the Role

The Culinary Supervisor reports to the Concessions Chef and coordinates the day-to-day operations of assigned kitchens.

Responsibilities

  • Follow Executive Chef and/or Sous Chefs assignments for opening and closing procedures and food preparation.
  • Report daily on progress and needs to Chefs.
  • Lead a team with respect and commitment to exceeding guest expectations daily.
  • Perform daily uniform checks with staff and help maintain kitchen standards.
  • Ensure staff prepare food items complying with portion size, quality standards, departmental rules, policies, and procedures.
  • Maintain HACCP standards for food quality, temperatures, product rotation, cleanliness, and sanitation.
  • Maintain cleanliness of kitchen, including walk-in coolers, dry storage, shelves, walls, floors, and drains.
  • Ensure all food preparation equipment is clean, sanitized, safe, and operable; report issues to Chefs.
  • Identify and store meats, poultry, seafood, pasta, starches, dairy products, and other food items according to established standards.
  • Participate in monthly inventory for the department of responsibility.
  • Act as a team player with responsibilities related to preparation, service, and product delivery.
  • Adhere to Legends Uniform and Grooming guidelines.
  • Perform other duties as assigned.

Qualifications

  • Professional training through a culinary education or experience in a fast-paced, high-volume fine dining restaurant/catering facility; full-service casual dining preferred.
  • Extensive knowledge of food and beverage menus, specials, and services offered.
  • Must be able to obtain food safety certification.
  • Ability to multi-task in a fast-paced, team-oriented setting.
  • Ability to read, speak, and write in English.
  • Sufficient mobility to perform tasks including constant reaching, bending, stooping, wiping, pushing, and pulling for extended periods.
  • Ability to lift, push, or pull approximately 50 lbs.
  • Must be able to stand or walk for long periods.
  • Must be available for all Stadium events.
  • Must be able to work extended hours, including late nights, weekends, and holidays.
  • Practice safe work habits and follow all safety policies, procedures, and regulations.
