About the Role

Performs stewarding and/or culinary duties as assigned. Responsible for the cooking, production of vegetable, and specialty station foods. May also cook roasted items to be used in other food outlets. Must maintain high quality food flavor and ensure food does not run out for the buffet during daily operating hours. Assures preparation and guest service is of the highest possible quality in a timely manner. Capable of working in public on live stations while maintaining superior appearance standards. Must utilize proper food handling techniques following health and safety standards.

Responsibilities

• Follows recipe specifications and maintains high quality and consistency.
• Cooks in volume and high-quality environment.
• Works from production sheets.
• Has knowledge of soups and sauces.
• Assists all culinary team members in food preparation.
• Performs miscellaneous duties as assigned.
• Keeps and uses rotated food items.
• Keeps refrigerators and dry storage organized and clean.
• Provides excellent guest service to both guests and internal clients.
• Adheres to all Tribal Ordinance, Regulations, and the ACRM and ACPS System of Internal Controls, and Standard Operating Procedures.

Requirements

• 5 years minimum related experience.
• Attend and complete California Department of ABC Lead Training Program.
• Must be able to obtain a Riverside County Health Department card within one week of employment.

Working Conditions / Physical Requirements

• Must be able to stand, move, and work throughout the property, including walking up to 1.5 miles, climbing stairs, and sitting at a desk/workstation for the duration of the shift.
• May be subjected to a smoke-filled environment.
• The noise level in the work environment is usually moderate but may escalate in the casino environment.
• Must be able to grasp, bend, lift, and/or carry or otherwise move goods weighing a minimum of 25 lbs. on an intermittent basis.
• Requires sufficient dexterity of hand to use office equipment, including computers, calculators, and multi-line telephones.
