Responsibilities
- Supervise the culinary department, including menu planning, supplies, food production, meal presentation, table service, budgeting, and kitchen safety.
- Hire, train, and supervise all culinary associates while promoting retention and development.
- Provide oversight for all food production, including menu planning, purchasing, cost control, and inventory.
- Ensure food safety through compliance with company, local, state, and federal sanitation and food handling procedures.
- Cook à la carte items and monitor adherence to the food and beverage budget.
- Maintain cleanliness and sanitation of equipment, food storage, and work areas, including a monthly deep clean of the kitchen.
- Prepare food according to recipes, ensuring high quality in taste and appearance.
- Plate and present food beautifully while adhering to budget and safety guidelines.
- Create and maintain a high level of service and hospitality in a team-oriented setting.
- Ensure departmental compliance with preparation and maintenance of required records, reports, and paperwork.
- Promote and contribute to the community’s positive reputation and perception of the culinary department.
- Serve as an active member of the community’s leadership team, providing support and guidance to other department leaders.
Requirements
- 2 years of experience as an Executive Chef in a commercial kitchen.
- Associate's Degree in Hospitality Management or a related area preferred but not required.
- Current Food Safety Manager's permit or equivalent as regulated by state and local authorities.
- Ability to use math for recipe computation and costing.
- Skills in preparing specialized dishes for specific diets.
- Organized and able to multi-task in a fast-paced environment.
- Availability to work some evenings and weekends for events and holiday staffing.
- Possess or be willing to acquire a valid driver’s license for company-related driving.
- Excellent written and oral communication and interpersonal skills, including effective communication with residents, families, vendors, associates, and corporate staff.
