Responsibilities
- Set up and organize work area with necessary supplies and equipment
- Receive, inspect, and rotate food products to ensure freshness and quality
- Prepare and store raw food products correctly
- Follow standardized recipes in preparing and cooking menu items
- Adhere to portion control guidelines and minimize waste
- Plate foods according to established guidelines
- Maintain prompt service and quality of food
- Monitor refrigeration and holding temperatures, clean and sanitize work surfaces, and wash hands frequently
- Use equipment safely and notify supervisor of malfunctions or hazards
- Notify Steward of clean dishes, pots, pans, and inform them of any hot items
- Clean and break down work area, return unused ingredients to proper storage
- Ensure all closing side work is complete, turn off cooking equipment, and secure kitchen
- Promote teamwork and apply teamwork skills
- Notify appropriate individuals promptly and fully of problems and concerns
- Be polite, friendly, and helpful to guests, management, and fellow employees
- Execute emergency procedures according to hotel standards
- Comply with safety regulations and hotel policies
- Attend meetings and training sessions
- Maintain cleanliness and excellent condition of equipment and work area
- Comply with hotel uniform and grooming standards
Qualifications
- High School Diploma or equivalent
- One year cooking experience in upscale, high volume hotel or freestanding restaurant
- Post-secondary culinary training/certification as "Cook" from a recognized culinary training school
- Thorough knowledge and understanding of Food Service Sanitation Standards
- Thorough knowledge and understanding of standard kitchen equipment and its use
- Ability to stand, stoop, bend, lift and carry up to 35 pounds
- Ability to read, write, and speak English
- Ability to work flexible schedules including weekends and holidays
