About the Role
Schedule will be 7a-7p. This position involves accurately and efficiently preparing a variety of food items in accordance with assigned work instructions and menus.
Responsibilities
- Function as a Lead for their respective shift, ensuring an efficient, well-running shift while supervising other positions (Cook I / FSW) to complete required tasks.
- Prepare a variety of meats, seafood, poultry, vegetables, and other food items for cooking using broilers, ovens, grills, fryers, and other kitchen equipment.
- Refer to Daily Prep List at the start of each shift for assigned duties and complete opening and closing checklists daily.
- Promptly report equipment and food quality or shortage problems to Assistant Food Service Director/Food Service Manager.
- Comply with standard portion sizes, cooking methods, quality standards, kitchen rules, recipes, policies, and procedures.
- Stock and maintain sufficient levels of food products at line stations to assure smooth serving of food.
- Portion food products prior to cooking according to standard portion sizes and recipe specifications.
- Complete required production paperwork and supervise inmates (when applicable) in tasks such as food prep, serving, clean-up, pots, dishes, and sanitation.
- Handle all aspects of receiving, storing, issuing, and controlling inventory (when applicable).
- Maintain a clean and sanitary work station area.
- Prepare food items for broiling, grilling, frying, sautéing, or other cooking methods by portioning, battering, breading, seasoning, and/or marinating according to directions.
- Follow proper plate presentation and garnish set up for all dishes.
- Handle, store, label, and rotate all products properly and in accordance with applicable state laws.
- Perform other duties as assigned.
Requirements
- High School Diploma or GED and/or equivalent experience.
- Must be at least 18 years of age.
- At least one (1) year of relevant cooking experience required.
- Prior experience cooking in a cafeteria or large volume production facility is a plus.
- Prior knowledge and experience in a kitchen or large cafeteria setting preferred.
- Experience with safety procedures as typical in a cafeteria or food service environment.
