About the Role
A Cook 1 at Maybourne Beverly Hills will prepare all meals and pastries to exact chef’s specifications and set up stations for the menu. You will assist the executive and sous chef with daily tasks, ensuring production meets quality standards using the freshest and highest quality ingredients. The role focuses on presenting well-prepared, flavorful food while maintaining the highest sanitation standards, exceptional guest satisfaction, and a safe, sanitary work environment.
Responsibilities
- Report to work in uniform at scheduled times and check in with the supervisor for instructions.
- Review station needs with fellow line cooks and/or the sous chef.
- Assist the team with daily quality control checks and maintain a clean, organized working environment at all times.
- Follow the “clean as you work” policy, ensuring sanitation and cleanliness of your station.
- Adhere to safety procedures for operating and cleaning all machinery.
- Maintain proper par stock levels, adjusting production as necessary.
- Inform management of any issues concerning food quality or production.
- Ensure the station is ready to serve 15 minutes prior to service time.
- Report maintenance or repair needs to the Sous Chef or Executive Chef.
- Assist with prep work, line cooking, cleaning, and organizing the kitchen.
- Be prepared to help in other kitchen areas during slow periods or as needed.
- Maintain high standards for the quality and appearance of all food prepared and served.
- Wear a clean uniform at all times and attend all kitchen employee meetings.
- Clean the entire station, including reach-ins and shelves, at the end of the shift and organize the walk-in.
- Be flexible to change shifts to meet business demands, including weekends, holidays, and overtime.
- Communicate with the kitchen team to review menus, determine food quantities, and ensure menu specifications are followed.
- Evaluate and substitute ingredients as needed without altering taste, appearance, or quality.
- Inspect food for quality, quantity, appearance, temperature, and taste to ensure freshness and proper preparation.
- Perform duties such as weighing portions, storing food at proper temperatures, sharpening tools, and cleaning equipment.
- Inspect work and storage areas for compliance with sanitation codes and review health regulations for food handling.
- Based on assignment, may also:
- Read and interpret dietary cards.
- Supervise line cooks and kitchen team members.
- Bake and prepare special dietary dishes.
- Train new kitchen staff and conduct orientation programs on safety and sanitation.
- Prepare meals for special events.
- Collaborate with chefs to establish standard operating procedures for food handling, preparation, and storage.
- Evaluate equipment needs and make recommendations to supervisors.
- Collaborate with the Executive Chef on performance evaluations, counseling subordinates, and recommending disciplinary action when necessary.
- Develop new or modified recipes, advise on menu applications, and participate in menu planning.
- Maintain a neat and clean personal appearance and report to work on time.
- Comply with Maybourne Beverly Hills Work Rules and Standards of Conduct, adhere to meal break policies, and follow proper payroll procedures.
- Perform additional duties as assigned by hotel management.
Requirements
- 3+ years of experience in a professional kitchen.
- Line supervisory experience.
- Good attitude, attention to detail, and ability to work under pressure.
- Ability to read, understand, and communicate verbally in English.
- Proficient knife skills and knowledge of cooking techniques for vegetables and proteins.
- Ability to follow recipes and identify various food products, including dairy, meats, and produce.
- Excellent understanding of cooking methods, ingredients, equipment, and procedures.
- Accuracy and speed in executing assigned tasks.
- Knowledge of standard methods and techniques for food handling, storage, preparation, cooking, and serving.
- Knowledge of safety practices and procedures in food handling, storage, preparation, and cooking.
- Understanding of the effects of time, temperature, and weather conditions on food.
- Knowledge of methods for preserving pastries and the terminology used in food preparation.
- Skill in using equipment for weighing and measuring food.
- Ability to judge food quality, appearance, and condition through sensory observation.
- Ability to read and interpret recipes, weights, and measures tables.
- Ability to follow oral and written instructions.
- Ability to establish and maintain harmonious working relationships with others.
Physical Requirements
- Regularly lift food cases and materials weighing up to 70 lbs; pushing and pulling carts is required.
- Frequent bending to lift items and supplies; some kneeling.
- May be stationary for short periods to complete tasks.
- Ability to go up and down stairs between ground level and lobby level.
- Work in assigned kitchen areas exposed to hot temperatures, water, steam, and smoke.
- Participate in outside special events with temperatures ranging from above 95°F in summer to as low as 30°F in winter.
- Active listening required for equipment, timers, and kitchen communication.
- Visual acuity to check food quality, portions, and cooking cues.
- Read recipe cards, procedures, safety information, and food labels.
- Use basic kitchen cleaning supplies and sanitizers.
- Wear required uniform: hair restraint/hat, gloves, apron, chef’s jacket, and closed-toed shoes.
- Communicate effectively with kitchen staff and the service team.
- Obtain any required food handling or sanitation certifications as mandated by local or state agencies.
