About the role

The Cook I plays a crucial part in the kitchen team at Raffles Boston, focusing on food preparation and service quality. They are responsible for setting up and breaking down stations, preparing daily and nightly prep lists, and maintaining cleanliness and organization in the kitchen.

Responsibilities

  • Set up and breakdown of stations
  • Cook food in assigned areas
  • Maintain quality of prep and service
  • Check and prepare daily and nightly prep list
  • Collaborate with other prep cooks and Sous Chefs
  • Inform supervisor of issues
  • Follow safe practices in the kitchen
  • Participate in trainings
  • Submit required reports
  • Maintain clean and organized refrigerators and kitchens
  • Practice FIFO storage
  • Be knowledgeable of Department of Health practices
  • Monitor quality of produce and presentation
  • Ensure proper portion sizes and visual appeal
  • Communicate with chefs to reduce food waste
  • Follow SOPs and local health department sanitation laws
  • Assist in onboarding new employees
  • Conduct daily food inventory
  • Create specials to reduce food waste
  • Execute luxury hotel standards
  • Handle special guest requests
  • Follow recipes and execute them
  • Conduct pre-shift meetings
  • Assist in meal service
  • Hold team members accountable for their stations
  • Train staff on execution and flavor profiles

Qualifications

  • 3 years of food prep experience in a restaurant or hotel
  • Culinary degree preferred but not required
  • Knowledge of food preparation techniques and health department rules and regulations

Physical Requirements

  • Long hours sometimes required
  • Exert up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull or otherwise move objects

Additional Information

  • Hourly wage: Introductory rate of $30.60 and then rate increases to $34.00 after successful completion of 90-day probationary period
