About the role

Michigan Technological University is seeking a Cook (12 months, 40 hours, 1st shift) for our Residential Dining department. The Cook will be responsible for the proper preparation and production coordination of all hot and cold menu items as assigned by the supervisor.

Responsibilities

  • Meet daily production and serving schedules for cafeteria lines, retail operations, special luncheons, buffets, and banquets.
  • Requisition from stores clerk and/or retrieve from storage foodstuffs and supplies to meet daily production and preparation schedules.
  • Operate all equipment used in preparation and production of menu items, employing proper safety procedures.
  • Advise other departmental employees on portion size, food items, ingredients, preparation methods, presentation, garnish, and quality control to ensure recipes are followed and production demands are met.
  • Provide information to customers as requested.
  • Maintain a clean, sanitary, and safe work area, including garbage removal and cardboard recycling.
  • Conduct daily, weekly, or monthly physical inventories in designated areas as assigned.
  • Assist in training and instruction of new employees, including regular and student staff, in food production.
  • Participate in training to accommodate operational changes affecting assigned duties.
  • Adhere to current uniform policies.
  • Commit to continuous improvement strategies and apply them to daily work.
  • Actively engage in University continuous improvement and safety initiatives.
  • Exercise functional supervision over student assistants and other personnel as assigned.

Requirements

  • High school diploma and culinary training, or an equivalent combination of education and experience.
  • Three years of experience working in a commercial, institutional, restaurant, or hotel kitchen as a skilled cook or equivalent position.
  • Demonstrated ability to perform as a skilled cook in processes such as baking, roasting, frying, grilling, braising, boiling, simmering, and stewing.
  • Demonstrated knowledge of cooking time, correct temperature, weight loss, portion control, and production standards.
  • Demonstrated ability to read and interpret recipes relative to quantity, consistency, and composition of menu items.
  • Demonstrated knowledge of all food service equipment operation.
  • Knowledge of sanitation standards for preservation of cooked and uncooked items and prevention of food contamination.
  • Demonstrated ability to give and follow instructions and work harmoniously with others in varying situations.
  • Excellent interpersonal and communication skills.
  • Ability to obtain a food safety certification within six months of employment.
  • Possess a valid driver’s license and meet Michigan Tech’s vehicle use requirements.
  • Demonstrated commitment to contributing to a safe work environment.

Desirable Qualifications

  • SERV Safe Certified.
  • Demonstrated success or potential to contribute to working with persons from diverse backgrounds, fostering a sense of belonging, and creating a fair, objective, and welcoming workplace.

Work Environment

  • Moderate to very loud noise levels.
  • Occasional lifting and/or moving of up to 50 pounds.
  • Requires close, distance, color, and peripheral vision, and the ability to adjust focus.
  • Work near moving mechanical parts.
  • Occasional exposure to wet and/or humid conditions, high or precarious places, fumes or airborne particles, extreme heat, and cold.

Required Training

  • Employee Safety Overview.
  • Anti-Harassment, Discrimination, Retaliation Training.
  • Annual Data Security Training.
  • Annual Title IX Training.

Pay

External candidates will receive the minimum pay rate of $18.30 per hour.

Schedule

  • 12-month appointment.
  • Full-time (1.0 FTE, 40 hours per week).
  • 1st shift.
