Chef de Cuisine - Narrows

About the role

The successful Chef de Cuisine will manage the kitchen staff, ensuring high standards are met for all culinary offerings. They will oversee production, preparation, and presentation of food, maintain a safe and healthy work environment, and control labor and food costs.

Responsibilities

• Manage daily production, preparation, and presentation of all food
• Achieve high standards and accolades for the award-winning Steakhouse
• Manage production and preparation areas, attracting, retaining, and motivating culinary employees
• Develop, empower, coach, and counsel culinary employees
• Conduct performance and salary reviews, recommend discipline, and terminate as necessary
• Schedule and manage maintenance and sanitation of the kitchen and related areas
• Monitor, analyze, and control labor and food costs
• Plan and develop menus and recipes, ensuring consistent preparation and presentation of food items
• Communicate with employees and managers to meet operational needs, coordinate tastings, and pre-meal meetings
• Attend regular operational meetings to ensure effective coordination and cooperation between departments
• Interact directly with guests to ensure satisfaction
• Promote a safe working environment to minimize liabilities and related expenses
• Assume responsibilities of the Executive Chef in absence
• Perform special projects and other responsibilities as assigned

Requirements

• Formal culinary arts training
• Thorough knowledge of food preparation and presentation
• Experience with purchasing and maintaining inventory levels
• Strong communication and organizational skills
• Hands-on, open-door style of leadership
• Ability to multi-task and work under deadlines in a stressful environment
• Thorough knowledge of all Microsoft applications and general computer literacy
• At least three years of experience in a similar role
• A sense of maturity and leadership
• The ability to functionally multitask with speed and grace
• Experience in both front and back of the house operations
