Brooklyn Bowl Las Vegas - Line Cook

Responsibilities

• Review menus and prepare food needed
• Assure that all food procedures are followed in accordance with company procedures and federal, state and local health codes and regulations
• Cook menu items in cooperation with the rest of the kitchen staff
• Follow all sanitation guidelines
• Set up and stocking stations with all necessary supplies
• Prepare food for service (e.g. chopping vegetables, butchering meat, or preparing sauces)
• Coordinate food service with other departments as necessary
• Answer, report and follow executive or sous chef’s instructions
• Clean up station and take care of leftover food
• Stock inventory appropriately
• Ensure that food comes out simultaneously, in high quality and in a timely fashion
• Comply with nutrition and sanitation regulations and safety standards

Qualifications

• Minimum of 5 years of Line Cook experience
• Minimum of 5 years working as a Line Cook in a restaurant
• High school diploma or equivalent is desirable; military school or formal on the job training preferred. Training from a culinary school will be an asset
• Experience with quantity food preparation preferred
• Knowledge of health and safety rules in a kitchen
• Manual dexterity able to operate cutting tools and kitchen utensils
• A team player with good communication skills
• Patient with an ability to stay positive under pressure
• Demonstrate cooking skills and ability to follow established menus and recipes
• Knowledge of proper nutritional requirements
• Line cooks need to be able to hear and understand specific instructions from their chefs
• Line cooks will be using their hands to cut and chop food, as well as other tasks
• Everyone in the kitchen works long hours on their feet over hot stoves and grills. Stamina is needed
• Line cooks are part of a team, and in a stressful, fast-paced environment, being a team player and level-headed will help immensely
• Must have a state issued Health Card
• Availability to work all shifts, during weekends, evenings and Holidays
• Must adhere to all safety measures and policies
