About the role
We are looking for an experienced Beverage Manager to lead the cocktail program at Jekyll and RO Hyde Park, a Three Oaks Hospitality Concept. Jekyll is a speakeasy built around craft cocktails, skilled bartending, and an atmosphere of intrigue and discovery. The ideal candidate will bring creativity, precision, and a passion for hospitality, mentoring a talented bar team while ensuring consistency and quality across both locations. Top candidates are creative, service-oriented, and level-headed, with availability to work late nights, weekends, and holidays. Pre-employment background and drug screening are required.
Supervisory Responsibilities
- Oversee cocktail preparation, presentation, and service to maintain consistency and quality.
- Mentor and train bartenders and barbacks, ensuring adherence to bar standards.
- Manage liquor, wine, and beer sourcing, beverage costs, and waste reduction.
- Ensure responsible alcohol service, sanitation, and adherence to liquor laws and safety regulations.
Responsibilities
- Plan and direct beverage service and bar operations for Jekyll and RO Hyde Park.
- Develop and refine craft cocktail menus.
- Manage liquor, wine, and beer inventory and ordering.
- Estimate beverage requirements and beverage/labor costs.
- Control beverage and pour costs.
- Maintain vendor relationships.
- Supervise bar staff's activities.
- Ensure compliance with liquor laws and responsible alcohol service.
- Perform administrative duties.
- Comply with sanitation regulations and safety standards.
- Serve as a replacement for bar staff in their absence.
- Maintain a positive and professional approach with coworkers and customers.
- Perform other duties as assigned.
Skills
- Craft Cocktail Development: Ability to create, refine, and scale balanced, innovative cocktails.
- Spirits & Wine Knowledge: Deep understanding of spirits, wine, and beer categories, production, and pairings.
- Bar Presentation: Expertise in elegant, on-brand drink presentation and garnishing.
- Program Development: Skilled in building seasonal menus and specialty cocktail programs.
- Excellent record of bar/beverage management.
- Ability to spot and resolve problems efficiently.
- Capable of delegating multiple tasks.
- Strong communication and leadership skills.
- Ability to keep up with beverage trends and best practices.
- Working knowledge of various computer software programs (MS Office, restaurant management software, POS).
Requirements
- Mixology/bar management certification or equivalent professional experience.
- Minimum 3-5 years in a professional bar setting, preferably craft cocktail or fine dining focused.
- Strong leadership, organizational abilities, and expertise in high-end beverage techniques.
- Valid Food Manager Certificate and state-required responsible alcohol service certification.
Physical Requirements
- Ability to traverse all parts of the restaurant quickly.
- Prolonged periods sitting at a desk and working on a computer.
- Must be able to lift 25 pounds at times.
