Responsibilities

  • Assists Pastry Chef in creating quality baked goods and coaching/mentoring the assistant baker.
  • Assist in forecasting usage based on set pars using a product mix.
  • Assist in maintaining inventory of bakery supplies.
  • Understands and complies consistently with our standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.
  • Assisting the assistant baker in understanding the importance of our policies and procedures.
  • Sets a good example for the assistant baker, maintains a clean and sanitary work station area including tables, shelves, walls, grills, broilers, fryers, flat top range, and refrigeration equipment.
  • Reports equipment and food quality problems to supervisor in a timely manner, passing along any concerns from the assistant baker.
  • Informs supervisor immediately of product shortages.
  • Uses our Standard Recipe Card for preparing all products and adds new recipes as needed/requested.
  • Uses all kitchen equipment following proper procedures and training.
  • Assists in training the assistant bakers to be well versed in equipment usage/knowledge.
  • Communicates with assistant baker and the Pastry Chef relaying food usage and quality control.
  • Follows proper HAACP guidelines when handling, preparing, storing, or stocking food items.
  • Attends all mandatory department, casino, and/or training meetings.
  • Follows all department and casino policies, procedures, and regulations as required.
  • Ensures compliance with Tribal, State, Federal, and NIGC regulations.
  • Ensures control/protection of company assets as applicable.
  • Works days, nights, weekends, special events, and holidays as needed.
  • Other duties as assigned.

Qualifications

  • Exceptional guest service skills required.
  • At least 2 years relevant work history required baking big bulk batches.
  • Must have experience in high volume scratch baking, bread doughs, cake, wedding cake, and overall pastry/cake decorating.
  • Must be highly detail-oriented, punctual, and reliable.
  • Must be quick and efficient and have the ability to work in a fast-paced and multi-tasking environment.
  • Positive, willingness to learn, friendly, and outgoing attitude required.
  • Ability to work independently.
  • Strong and outgoing verbal communication skills in person – face to face.
  • Exceptional guest service skills required.
  • Ability to maintain professional, courteous, and effective working relationships with all levels of the organization and outside business contacts.
  • Accurately follows directions from the management team.
  • Must be able to lift and move moderately heavy items on a regular basis.
  • Strong verbal communication skills required.
  • Ability to communicate clearly with all kitchen staff.
  • Manage flow and timing of finished product within a shift.
  • Basic math skills which include the ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.

Certificates, Licenses, Regulations

  • Must be able to obtain and maintain a Class B gaming license from the Stillaguamish Tribal Gaming Agency.
  • Must be able to obtain and maintain a Washington State Health Card (Food Worker Card).

Physical Demands and Work Environment

  • Constantly requires the ability to receive detailed information through oral and written communication.
  • The position requires exerting up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects.
  • Requires repetitive movement daily with sedentary work, occasional bending, and crouching.
  • There are no adverse conditions, but the employee is exposed to tobacco smoke on a regular basis.
  • This is a 24-hour, 7 days a week work operation.
