Assistant Food Service Director

Responsibilities

• Partner with the Food Service Director to plan and execute a large food-service operation with one or more production kitchens.
• Supervise food-service workers involved in food preparation and distribution inside a jail/correctional facility.
• Hire, orient, train, and administer corrective action when necessary.
• Develop positive client relationships through regular communication.
• Maintain accurate inventory and prepare food in the quantities and on the schedule defined by the facility or site plan.
• Store food items properly and ensure all items are served per menu specifications in a safe, sanitary manner consistent with departmental guidelines and Health Department codes.
• Prepare for and support state or other regulatory inspections of the food-service operation.
• Perform additional duties as assigned by management.

Requirements

• High School Diploma or GED (or equivalent experience).
• At least 18 years of age.
• Two years of management or supervisory experience in a food-service position.
• Three years of experience working in food service.
• ServSafe Certification.
• Experience with purchasing, inventory control, ordering, and receiving.
• Knowledge of kitchen sanitation and safety standards and methods.
• Basic accounting skills and mathematical ability for required reports.
• Proficiency in Microsoft Office and food-service management systems.
• Preferred: prior institutional food-service or restaurant experience.
