Assistant Executive Steward
About the role
Train stewards; verify daily assignments are completed with daily kitchen walks. Ensure sanitation standards and cleanliness in all kitchen areas. Clean and sanitize all areas of the kitchen and operate the dish washing machine in a safe, accident-free manner. As well as ensuring the organization, sanitation and cost of the operation is consistent with the overall food and beverage goals and objectives.
Essential Functions
- Coach, counsel, track attendance, verify payroll, and schedule according to business levels for the steward team.
- Train new stewards as required.
- Supervise assigned operational functions within the department consistent with the strategic plan, fiscal budget, and the company’s short term and long-term objectives.
- Supervise the delivery and measurement of guest service consistent with the company’s core service standards and brand attributes.
- Make routine inspections of all equipment and kitchen areas to ensure that cleanliness and sanitary procedures are maintained.
- Requisition new and replacement equipment as needed.
- Approve requisitions related to all cleaning supplies and equipment and monitor supply to ensure costs are kept to a minimum without losing quality and usage of materials.
- Maintain inventory and record keeping for all dinnerware, flatware and glassware, glass and silver.
- Ensure proper set-up, breakdown and maintenance of all special events.
Experience/Qualifications
- Minimum Degree Required: High School Diploma or Equivalent
- Certificate(s) or License(s): Valid Driver’s License
- Years of experience: Five years of experience in stewarding, kitchen maintenance, kitchen operations or similar.
- Knowledge of food and beverage service operation is preferred.

- Reading Comprehension - Understanding written sentences and paragraphs in work related documents.
- Oral Comprehension - The ability to listen to and understand information and ideas presented through spoken words and sentences.
- Analytical/Critical Thinking - The ability to gather and organize information using a logical and systematic process; recognize patterns and relationships in complex data; examine data to identify implications, problems and draw appropriate conclusions; generate alternative solutions to problems; evaluate strengths, weaknesses and consequences of alternative solutions and approaches to solving problems.
- Customer and Personal Service - Knowledge of principles and processes for providing customer and personal services. This includes customer needs assessment, meeting quality standards for services, and evaluation of customer satisfaction.
- Number Facility - The ability to add, subtract, multiply, or divide quickly and correctly.
Physical Requirements
- Regularly walks, works on a computer, and lifts up to 50 lbs.
- Occasionally sits and stands.
Independent Judgement
- Develops objectives and general policies and procedures for a specific program or functional area of responsibility within general scope of established operational goals and plans.
- Day-to-day work and decisions do not require direction or review by immediate supervisor. End results are reviewed by supervisor.
